Sticky greek style chicken nibbles

Chicken nibbles

Ingrediants

500 grams Chicken Nibbles.

5 cloves of NZ garlic, finely chopped

1 teaspoon fresh thyme

Zest and juice of 2 lemons

2 Tablespoon honey

Salt and pepper to taste

Extra virgin olive oil

Instructions

  • Combine all ingredients and allow to marinate in the fridge over night

  • Cook Chicken on the BBQ , checking that it’s cooked all the way through

  • Set aside to rest while making the salad

Witloof Salad

Instructions

  • Thinly slice and wash the Witloof, drain off any excess water on paper towels

  • Make a simple vinaigrette using garlic, dijon mustard, castor sugar, lemon juice, zest. Extra virgin olive oil

  • Place ingredients in a jar, place the lid on tightly and shake until well combined

  • Dress the Salad greens and place on a platter, top with the chicken nibbles
