Hot Cross Buns

Makes 24

Ingredients

20 grams Dried yeast

500 ml milk

200 grams honey

1.7kg flour

175 grams soft butter

3/4 Tablespoon freshly ground cinnamon

1 Tablespoon Mixed spice

1 teaspoon ground cloves

500 grams of currants

1 cup mixed peel

salt to taste

(for the cross) - flour and water to make a paste

Instructions

  • Mix the fresh yeast, milk, honey, flour and the soft butter in a bowl

  • Tip the dough onto a floured surface, knead and then leave to rise for one hour in a warm spot

  • Once the dough has risen, add the salt, cinnamon, nutmeg, cloves, currants and mixed peel, and lightly knead until every distributed

  • Divide the dough into 90gm portions and round into even buns. Lay out on a lined baking tray and leave to prove for a further 30 minutes, until they’ve expanded

  • Pipe the water paste over the buns to make the cross

  • Bake the buns at 160 C for 25 minutes

  • If desired, glaze with sugar syrup once out of the oven. Alternatively bowl a little apricot jam and a littler water to create a simple glaze
